Beef Oxtail

Oxtails are a very affordable cut from the tail that is high in flavor and connective tissue that dissolves into gelatin, giving body & better mouth feel to broths & braising liquid. Tail meat is quite tough unless slow braised.

Oxtail is typically cross cut using a band saw into disc portions that look like mini osso bucco. They can also be hand cut at the joints into larger pieces. These tails are sold whole (short cut & trimmed).
