Here’s a simple dry rub packed with the earthy, fruity, slightly spicy flavor of ancho chiles. It’s delicious on grass-fed beef!

Ingredients Makes 3/4 Cup

    • 2 T Cilantro
    • 3 Garlic Cloves
    • 2 T Lime Juice
    • 4 Ancho Chilies
    • 2 t Salt
    • 2 T Oil

Instructions

Put the ancho chilies in a small bowl and pour boiling water over them. Put a lid, silverware or some other weight on top of them to keep them submerged. Steep them for 15 minutes, then drain off the water.

Cut the stems off the chilies and remove their seeds. Add them to a blender or small food processor with the cilantro, garlic cloves, lime juice, salt and oil. Blend until a smooth paste forms.

Rub the paste all over the beef & put it in your refrigerator for several hours. (You could also cook it right away, but the flavor won’t be quite as good.)
