
Grass-fed beef burgers have a cleaner flavor that allows toppings to really shine. Here they’re paired with classic southwestern flavors – grilled cactus pads (nopales), roasted red peppers, guacamole and cheese.

- Grass-Fed Beef Burger Patties
- Burger Buns
- Aged Sheep’s Cheese, thinly sliced
- Guacamole
- Lime Juice
- Cactus Pad(s), spines removed (one per 3 burgers)
- Roasted Red Peppers (one large piece per burger)
- Salt
- Oil

Oil a grill or grill pan

Season the cactus pads with salt and a little lime juice. Coat them with oil, and grill them on both sides until they’ve softened and developed grill marks.

Cut each cactus pad into thin strips.

Toast the burger buns.

Grill the burger patties. After flipping them to grill the other side, add a few slices of the cheese and a piece of roasted pepper.

Put the finished burgers on the toasted buns. Top them with guacamole and cactus pad slices.
