This hybrid stove & oven roasting method is one used in a lot of restaurants to ensure steaks develop a beautiful, tasty crust on the outside while being perfectly cooked in the middle.
- Grass-Fed Beef Steaks of Choice
- High Heat Oil (Grapeseed, Peanut or Canola)
- Salt & Pepper
Preheat your oven to 400˚F.Preheat your oven to 400˚F.
Dry any surface moisture off your steak(s) and season them with salt & pepper (unless using a rub).
On the stove, heat an oiled oven-safe cast-iron skillet or frying pan. When it is quite hot, add the steak(s). Sear them on all sides until they develop a golden crust.
Leave the steaks in the pan and move it to the middle of the preheated oven. Roast them until they reach your desired level of doneness (test with a probe thermometer).
Move the steaks to a plate, loosely cover them with foil and let them rest for 5-15 minutes (the larger the cut the longer the rest) before slicing and/or serving.
